Green coffee beans are submerged in water allowing the flavor, oils, and caffeine to gradually escape the beans surface. The water and green coffee are separated. The water is treated with methylene chloride, a solvent that absorbs the caffeine through a process of heat and evaporation. The flavor and oils that remain in the water are then added back to the green coffee beans.
